Ingredients
½ cup all-purpose flour
3 ripe bananas
1 table spoon sugar (optional depending on the extent of your sweet tooth)
1 teaspoon baking powder
¼ teaspoon salt
1 egg (beaten)
½ cup milk
Directions
- Mix flour, sugar, baking powder and salt.
- Chop up your bananas and throw them in a blender and blend until smooth.
- In a separate bowl, mix together the egg, milk, and the blended banana paste.
- Stir flour mixture into the banana mixture.
- Heat a lightly oiled frying pan over medium heat and start cooking your pancakes to your likeness – thick or thin, small or large. It’s all up to you.
- Cook until pancakes are golden brown on both sides
- You can garnish with a fruit of your choice or whipped cream and enjoy.
PS: To avoid dirtying up a number of dishes, I just throw everything into the blender and blend away until it becomes one smooth batter!
xoxo
